Interview with Richard Allison @Rootbitters
DESCRIBE YOUR DRINK-MAKING STYLE.
My drink-making style has changed over the years along with my palate. I now believe and pull inspiration from many different angles. From cuisines, culture, architecture and travel. You can really find inspiration everywhere. From the ingredients in the glass, to the garnish, to the vessel. There is no limit or rules.
WHAT'S SOME ADVICE FOR THOSE JUST STARTING TO MAKE THEIR OWN DRINKS?
When just starting out, it is always important to learn the classics. The foundation of the classics are super simple and tools that you will carry with you once you start developing and creating new drinks. The classics are easy to adapt, riff off of, and you'll start to build an arsenal of ideas and feel comfortable doing it. Another great tip is to watch bartenders, not aggressively, but watch how they hold their tools, watch how they shake. Ask questions and read as many books as you can.
WHAT'S SOME INSIDER KNOWLEDGE ABOUT BARTENDING THAT MOST PEOPLE MAY NOT KNOW?Â
There are a ton of operations on the back-end that people don't see. Steps of service developing a program, making syrups, tinctures, bitters, etc. These are things people don't see, but they are beneficial to the drinks you are making and serving.
WHAT ARE YOU THOUGHTS ON YOUR DRINK, THE LEMON DROP?
I wanted to create something that everyone could enjoy every season of the year. Still getting creative and innovative, but building a cocktail that is still relatable and approachable.
